Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tbsp olive oil or butter (for searing)
For the Honey-Mustard Sauce:
- ½ cup Dijon mustard
- ½ cup honey
- 2 tbsp mayonnaise
- 1 tbsp lemon juice (optional)
Toppings:
- 8 slices cooked bacon
- 1 cup sliced mushrooms
- 1 cup shredded Colby Jack cheese
- 1 tbsp butter (for sautéing mushrooms)
Instructions
1. Prepare the Sauce
- Whisk together Dijon mustard, honey, mayonnaise, and lemon juice.
- Taste and adjust sweetness or tanginess as desired.
2. Season and Sear the Chicken
- Season chicken breasts with salt and pepper.
- Sear both sides in a skillet with oil or butter until golden (not fully cooked).
- Transfer to a baking dish.
3. Add Sauce and Toppings
- Spread honey-mustard sauce over each chicken breast.
- Sauté mushrooms in butter for 3–4 minutes and add on top.
- Place two slices of bacon over each piece.
- Top generously with shredded cheese.
4. Bake
- Preheat oven to 350°F (175°C).
