Alice Springs Chicken is a savory, slightly sweet, cheesy chicken dish layered with smoky bacon,
sautéed mushrooms, and a creamy honey-mustard glaze. It’s hearty, satisfying, and perfect for family dinners
or entertaining guests. Serve it with fries, mashed potatoes, veggies, or a salad to complete the restaurant experience.

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tbsp olive oil or butter (for searing)

For the Honey-Mustard Sauce:

  • ½ cup Dijon mustard
  • ½ cup honey
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice (optional)

Toppings:

  • 8 slices cooked bacon
  • 1 cup sliced mushrooms
  • 1 cup shredded Colby Jack cheese
  • 1 tbsp butter (for sautéing mushrooms)

Instructions

1. Prepare the Sauce

  • Whisk together Dijon mustard, honey, mayonnaise, and lemon juice.
  • Taste and adjust sweetness or tanginess as desired.

2. Season and Sear the Chicken

  • Season chicken breasts with salt and pepper.
  • Sear both sides in a skillet with oil or butter until golden (not fully cooked).
  • Transfer to a baking dish.

3. Add Sauce and Toppings

  • Spread honey-mustard sauce over each chicken breast.
  • Sauté mushrooms in butter for 3–4 minutes and add on top.
  • Place two slices of bacon over each piece.
  • Top generously with shredded cheese.

4. Bake

  • Preheat oven to 350°F (175°C).
  • Bake for 20–25 minutes until chicken reaches 165°F (74°C) and cheese is melted.

Tips

  • Colby Jack melts best, but other cheeses work too.
